Our first vintage fortified wine, a late bottled style, made from 70% Shiraz and 30% Tinto roriz, the Portuguese name for Tempranillo. Whole bunches of very ripe fruit were crushed with bare feet (clean!) to release the concentrated juice and to allow the natural fermentation to proceed via indigenous yeasts. With the desired level of residual sugar remaining, the must was fortified with pot-still brandy spirit bringing the alcohol content up to about 18% and thereby stopping further fermentation. The must was then pressed, separating the young fortified from the skins and stalks, from where it was transferred to older barrels.
