Red Wine with an Edge

Cabernet Sauvignon '08

Cabernet is generally our last picked variety in Heathcote and this year we hand picked about 3 tonnes on the 25th of March. The grapes had fully ripe blackcurrant fruit flavour, adequate natural acidity, and balanced firm tannins at picking. 25% of the grapes were included as whole-bunches with the balance crushed and destemmed  into pot fermenters. Indigenous yeast fermentation proceeded to dryness before pressing after 10 days on skins, directly into new and older barrels.

Matured in barrel for almost 3 years during which time the wine was decanted (racked) numerous times before bottling in March 2011.

The extra time in oak barrels has resulted in a rounder softer texture, still with vibrant fruit and abundant tannins, but now more approachable as a younger wine. All parameters would indicate a long life ahead.

Colour: 

Dark rich red

Bouquet: 

Bursting with cassis/black berry fruit, licorice and slightly minty notes, cedary oak background.

Palate: 

Full bodied with sweet up-front fruit richness. Ripe fine tannins that linger and finish with dry savoury flavours.

Cellaring: 

Longevity is assured, probably 10 years plus, rounding and softening as primary fruit evolves into more complex savoury aged characters.
