The 2007 version of our Spanish inspired wine is a blend of Tempranillo and Mourvedre, also known as Monastrell. The varieties are near each end of the ripening spectrum, the Tempranillo being our first variety to ripen, and Mourvedre one of the last. Each variety is picked, fermented and matured separately before blending prior to bottling. The deeper darker fruit and firmer tannin backbone of Mourvedre is a perfect foil for the spicy vibrant Tempranillo. This wine has savoury flavours and soft tannins which make it ideally accompanied with food.
