2006 represented a great year in Heathcote with a large crop and high quality fruit. Peter decided to hold back 10 dozen of the 2006 Cabernet Sauvignon as a cellar release, for your tasting pleasure.
Cabernet Sauvignon lends itself well to ageing, with firm tannins, natural acidity and the ability to develop tertiary characteristics. The primary fruits evolve into more complex savoury characters. The balance of the wine in 2006, meant it was superbly suited to cellaring. Some 14 years later, it is now in its prime.
Peter noted at the time that "longevity is assured, probably 10 years plus, rounding and softening as primary fruit evolves into more complex savoury aged characters."This has come to fruition, the wine expressing 'sous bois', dark tarry aromas and leathery spice characters. Ready to drink now.
