2010 was a cooler year in Heathcote, with a large crop and high quality fruit. Peter decided to hold back 10 dozen of the 2010 Cabernet Sauvignon as a cellar release, for your tasting pleasure.
Cabernet Sauvignon lends itself well to ageing, with firm tannins, natural acidity and the ability to develop tertiary characteristics. The primary fruits evolve into more complex savoury characters. The balance of the wine in 2010, meant it was superbly suited to cellaring. Some 11 years later, it is now in its prime.
Peter noted at the time that the wine showed "concentrated Cabernet aroma and flavour of cassis and dark berries, and will benefit from lengthy cellaring." This has come to fruition with the wine expressing 'briary herbal notes', dark/black fruit aromas and a silky soft palate. Ready to drink now.
