2008 was a warm year in Heathcote, with a large crop and high quality fruit. Peter decided to hold back 10 dozen of the 2008 Cabernet Sauvignon as a cellar release, for your tasting pleasure.
Cabernet Sauvignon lends itself well to ageing, with firm tannins, natural acidity and the ability to develop tertiary characteristics. The primary fruits evolve into more complex savoury characters. The warmth of the 2008 vintage is expressed in this wine with the fruit still shining through. Some 13 years later, it is drinking superbly.
Peter noted at the time that the wine showed "concentrated Cabernet aroma and flavour of cassis and dark berries, and will benefit from lengthy cellaring." This has come to fruition with the wine expressing 'briary herbal notes', dark/black fruit aromas and a silky soft palate. Ready to drink now.
